In the preparation of our acorn-fed hams we take care of every minute detail, salting and post-salting are supervised so that the temperature and humidity are perfect.

All this to finish in our natural dryers, which ensure that the maturation generates the aromas, transforming the pieces until they acquire their final nuances.

Curation for no less than 36 months in the case of acorn-fed hams.

Salted meat made with the muscle mass and bones of the hind limb of Iberian pigs, outlined at its edges until the appearance of the muscle, preserving the bark and the hoof, which has undergone a suitable maturation-drying process. Classified according to the Quality Standard as Bellota 50% Iberian Ham.

Organoleptic Characteristics

Firm and compact consistency with a bright red color when cut, with fat with an unctuous consistency and partially infiltrated in the muscle mass, aromatic white-yellowish in color.
