A cured meat product made up of a selection of lean from minced pork and fat to which salt, spices and additives are added; stuffed in natural casing, followed by a curing and maturation process.

Sausages in pig casing are matured in dryers for a minimum of 120 days

Organoleptic Characteristics

Firm and compact consistency, rough external appearance with good adhesion of the casing to the dough. The cut is homogeneous, bound and without abnormal coloration, with a clear difference between the meat and fat fragments. It presents a characteristic smell provided by the spices, condiments, additives and the curing process. Stuffed in 60-65 mm caliber natural casing
