Cheeks in sauce


Red wine cheeks

Do you want to give a touch of class to your table? Do you want to eat something other than fried eggs with potatoes? For this weekend we propose you to prepare a very special recipe of Iberian Sirloin to Pedro Ximénez.

Ingredients

- 8 Iberian pork cheeks

- 2 carrots

- Broth or water.

- Onion

- Pepper

-Ripe tomato

- Salt

- Meat or water broth

- 4 tablespoons virgin olive oil

- Black pepper

-Quality red wine, in this case you have to spend a little, no bottle

-Leek

Preparation

1 First of all clean the cheek well from the cloth that covers it, season.

2 In a splash of oil in a pan, seal the cheek over high heat, set aside.

3 Chop the vegetables very well and add them to a casserole (the tomato a little later) with a good splash of olive oil and season.

4 We let them stay very very golden cooked over medium heat.

5 We incorporate the cheek to the vegetables

6 Have 1/2 liter of broth or water ready approximately very hot

7 Cover the cheek with the red wine and add the same amount of broth.

8 Let it simmer for about two hours, I left them almost half an hour more and added on one occasion a little more broth.

9 The liquid will reduce a lot and the cheek will be mellow.

10 Separate the meat from the vegetable and reduce the sauce, if it is very thick add a little broth.

11 In a pan put the sauce with a tablespoon of butter and melt and mix with the sauce, it will give it more shine.

12 Salt the meat and serve
